Last weekend my little sis graced us with her presence followed by a slumber party. When we have visitors, I somehow think that making goodies will up the chances of their return.. so I thought it only appropriate to make some food for her, more importantly.... breakfast food. I stumbled upon the recipe through pinterest and landed on the homepage of this lovely blog. (Don't worry, I didn't steal her pictures... just her idea, recipe, and everything other than her pictures.) In the end it was a successful slumber, and I know for a fact it will keep her coming back for more. Okay, I'm starting to sound desperate.
Here's the recipe.

Ingredients:
2 C flour
1 t baking powder
1 t baking soda
1/3 C sugar
a pinch of salt
1/3 C poppy seeds
zest of 4 lemons
2 C buttermilk
2 large eggs, lightly beaten
2 T butter, melted
butter, to serve (and for griddle)
fresh blueberries

Directions:
1. Combine flour, sugar, baking powder, baking soda, and salt in large bowl
2. In another bowl, combine the buttermilk, eggs, lemon zest, butter, and poppy seeds.
3. Add the wet to the dry until it's the right consistency (you might not use all the wet) and stir all the ingredients together.
4. Heat up griddle to medium and brush with melted butter. Pour about 1/3 C batter into the skillet. Wait until bottom is golden and flip. Repeat with rest of batter.
5. Serve with warm syrup, butter, and fresh blueberries.

Enjoy!
